Where are they, and how do they work. I know the benefit of the thieves guild is the ability to steal from other players, wonder what the merchant's guild gets you

They're spread out all over. One of the best ones to join would be the mage's guild. It'll drop the prices for Black Pearl, Blood Moss, and Blank scrolls from 5 each down to 4 each. Doesn't sounds like much, but in the long run, it's a wonderful money saver.

And is that just when you buy the regs from the guild itself, or any mage/reg shop?

I was looking for something on stratics about them, since the wiki here has nothing. What the benefit of being in each guild is, and what you can do in the guild/vendor commands, etc

From my experience both mages and alchemists gives discounts when you join. not a bad deal for 500 gp lifetime membership

As far as I know, no. But I've not tested the theory.

Where is the thieves guild? I looked in every town listing on stratics, I'm guessing it's underground and doesn't have a physical guild hall, who do you have to talk to in order to join then?

Look in the Taverns in Britain for Thief Guildmasters. They are in other taverns across the land, as well as having one in Bucs Den.

I noticed the wiki also does not go into depth on the advantages of each guild for joining? Does anyone know what they are?

AFAIK, with the exception of the thieves guild, you just get a 20% discount (rounded down, so zero on any item costing less than 5gp) on goods sold by NPCs in the related professions.

I've never hear of any other perks, unless someone else has any info?...

Anyone know where the Tailor GuildMaster lurks on UOSecondAge ?

Should find them at tailor shops. Not sure if all have them, but off the top of my head I think I recall seeing one in Ocllo. You just go up to him and say "<name> join" he'll ask for 500gps, and that's it.

Yup ! Ocllo it was (NPC name: Norbert). Just tought I'd rectify tho, the rebate isnt 20% as was posted, but rather 10%.
