Found this works in 11.04, I would imagine it applies to 10.04 & 10.10 as well, but I'm not certain and I don't know about earlier versions. Simply go to the graphics tab in Winecfg and uncheck 'Allow window manager to control windows' and voila, counters and health/stam/mana bars restored.

HOWEVER - I found this pretty much kills razor, my hotkey & macro menus were totally inaccessible and the other issue is you can no longer minimise UO to the tray, instead being left with an ugly icon sitting in the middle of your screen when minimised.

If anyone has a smart way to refine this method and avoid these 2 issues, I'd love to hear it.
