Actually there were ways to gauge a pets progress, not that the enhancement to animal lore that told you exactly was imbalancing, but yes without bonding your pet could die to a moment of lag. The exact same fate a warrior's weapon might suffer as well.
That 5-10 minutes it took you to tame a new dragon are 5-10 minutes that you're in competition with other tamers, 5-10 minutes you can die to lag while taming, and 5-10 minutes for a PK to show up and attack you. A heck of a lot can start happening in those "5-10 minutes".
Personally, I've run off to tame a pet for "5-10 minutes" and ended up in a massive 4-way war.
One difference between tamers and smiths, is that tamers don't need customers. I also don't think bards have ever been more effective then tamers, especially when you consider that many pure pvm tamers are also bards.
And yes, I do think taming became a lot more popular after bonding went in. Most of the twinks who needed a dozen dragons simply found other ways to twink after that was cut down. I can't think of one person on Siege who quit because of the pet control limits, but plenty changed their playstyle.
