I've seen this mentioned in some threads but haven't seen any hard numbers in my research, I was wondering how close you have to be to min taming skill for a creature (white wyrm in my case) to gain off an untamable if it's still possible to do?

Not possible. If your chance of succeeding at something is 0% or 100% you cannot gain skill points while doing it.
