Leather Tunic and Gorget...
70 intel 80 med...quite fast if you ask me, the ar might be lower as I was using a mace on it prior to

The status quo of T2A pvp "templates" is nothing but a convention - it's not a rule, and if you are skilled at your own particular method then you'll be able to stick it to them.

I'd suggest using a high AR plate tunic with a dress/undress macro - I use to do that on my medwarrior and it was outstanding protection and the ability to remove it fast to "regen while chasing" your opponent

What's good about female characters is that male armor can be worn on top of female armor. So the plate over leather could work for a Female medi-dexxer in combination with the protection/reflective armor spell in order to avoid interrupt.
I just wanted to show that articles of leather that though it slows down mana regen, isn't as much as a deterrent as what some people think it is. Of course without it I regen nearly one point a second.
A 5X mage thief for example with 100 meditation and 100 intelligence for example would have even quicker regeneration then shown with the tunic and gorget.

I don't think layered armor provides any additional AR. Plate supersedes afaik.
If you're going to use RK's suggestion I don't think it would make sense to remove metal armor so you can chase and regen mana at the rate of leather armor. If you're going to bother removing the plate chest you might as well remove as much hindrance as possible. Passive med regeneration is slow enough that you'll want it to go as fast as possible.

Armor doesn't stack, but if you are in combat especially with low wrestling some armor would make sense even if you are regenerating to help both protect and help avoid interrupt. The whole point of a medi-dexxer is close combat. If you had to withdraw from melee to heal (if possible) then yeah removing armor entirely would make sense.
Or if you had to have that mana asap.
Everything is conditional.

Well Im assuming you're wearing other armor anyways. I think you'll find armor isn't super important anyways. Not too many dexers on the field to fight anymore and the armor will only protect you from hally hits from a mage. You're better using armor that doesn't reduce your dex at all or even no armor what so ever. Chug blue pots and make sure you disrupt all their damage spells and gheal.
I'm not saying that the armor wouldn't have some impact in some specific situations that I'm sure you've dreamed up. You always have scenarios in mind for your templates - but practically speaking those situations just do not occur.
This isn't OSI, PVP has been refined to very specific styles. You may be willing to try out new things on the field but noone else is really doing anything creative. You can expect 99% of your opponents to do basically the same thing with varying degrees of effectiveness. They have you worry about your weird strategies but you don't need to be worried about anything unexpected.

Err... avoid interrupting what exactly? Healing or casting spells?

Just being in melee even without being hit will delay bandaging.
If you can nullify damage you will not be interrupted in casting. Just need to cross your fingers for low rolls.
Reflective armor is better against mages when you spam attack last, protection vs dexxers which is a bit more prolonged as far as protection goes.
