what is better for Wrestling the Skill Anatomy or Tactics? What is the difference between?

Tactics would add more damage bonus than anatomy, but they're both a waste of time unless you're building a WWF character as wrestling does so little damage that nobody uses it offensively. It is only really used to prevent you being hit when not wielding a weapon.

Wrestling skill is nly used in combination with magery skill because it increases the chance your opponent will miss when they swing a weapon at you, and it decreases the amount of damage taken when a weapon does hit you, an absolute must for a mage.
