Some questions

I've just come over from Divinity, where I played two characters.

A dexer: gm fence, tact, heal, anat, resist, mage, hide.

A bard: gm provo, music, mage, resist, eval, med, hide.

Both characters served me vey well on Divinity.

Are there any reasons / differences between UOSA and Divinity that would make these templates less useful? If so, which?

Clearly, the bard was my PvM char and the dexer I used for PvP.

Also, what is the skill gain like on this server? Slower / faster than on Divinity? Slow / fast in general?

Can I gm healing with healing just hps, or do I have to make the switch to curing poison / resurrection to get to gm? What about provo? Can it be gmed on rabbits, or do I have to up the ante to keep gaining in skill?

Any advice on noteable differences between UOSA / Divinity that will help me in building this characters is of course very welcome.

Both of those templates should serve you very well here

Skill gain is slower than Divinity, faster than OSI was during T2A (if you played IPY in 2003-2004, the skill gain here is similar)

You can GM healing by just healing damage, but if you do cure/res, it's going to be a heck of a lot quicker. You can macro provoking any animal over and over again and you'll GM provocation (ie it's not difficulty based)

Advice.. UOSA is more accurate than Divinity to the era, so you may need to re-learn parts of the game against as the staff here has really pulled this shard away from the default RunUO package settings. Skill gain is quicker off NPCs than PCs (something to note when sparring up that dexer).
