Do I need to have anatomy to run alongside healing...e.g 60 anat and 60 healing to cure poison and 80/80 for res?

Also, does having the Poison skill actually increase the damage of poison spell...so a GM poisoner will do more damage with In Nox than someone with 0 poison?

You don't need anatomy to heal. You do need anatomy to cure poison, and the level of you anatomy will increase the amount you heal for. You also need anatomy to ressurect.

Poisoning skill only controls you ability to use poison on a weapon. It has no effect on the spell poison.
